party leftover: salad, yam fries & garlic mayo 爬地剩菜: 沙律, 蕃薯條配蒜蓉蛋黃醬

Yam fries have recently become very popular in North America. I especially love the sweeten flavor (can't argue with my sweet tooth!) and the lovely vivid orange color. Not to mention they are easy to make. Another must-have item for parties!




Tomato & Avocado Salad

1 serving

Romaine lettuce heart // 1
Tomato // 1
Avocado // 1
Olive oil // 1 tbsp
Balsamic Vinegar // 1 tbsp
Salt // 1 pinch
Ground pepper // 1 pinch
Bacon bites // 2 tbsp

1. Chop lettuce into thin strips. Cut tomato & avocado into small cubes. Place them into a large bowl.

2. In a small bowl, whisk olive oil & balsamic vinegar until well combined. Add in salt and pepper.

3. Toss everything to combine.

* notes *
1/ I've use lemon flavored olive oil, love that flavor! You can add 1 tsp of lemon juice to the dressing as well.

2/ For vegan version, substitute roasted almond or pecan for bacon bites.



Yam fries

4 servings

Yam // 2
Olive oil // 2 tbsp
Salt // 1 tsp
Ground pepper // 1 tsp
Chili powder or ground cumin // 1 tsp

1. Wash and scrub yams skin. Cut each into thin strips.

2. Spread the strips in single layer on baking sheet coated with cooking spray or parchment paper. Sprinkle olive oil and all other seasoning. Toss well, make sure all strips are evenly coated.

3. Bake 450F for 15 minutes, turning every 8 minutes.



Garlic Mayo

1 cup

Garlic, mashed // 1 clove
Mayonnaise // 1 cup
Salt // 1 pinch

1. Mix all ingredients together.

* notes *
1/ When the garlic flavor is overpowering, I add a little bit honey to smooth the flavor.
