Waterchestnut sweet soup 蛋花馬蹄露



蛋花馬蹄露

4碗

馬蹄 // 8
蛋 // 1
冰糖 // 1/4 cup
馬蹄粉 // 2 tbsp
水 // 5 cup + 1/3 cup

1. 馬蹄洗淨去皮,拍碎或切成細粒。蛋去殼拂勻。

2. 水和冰糖煲滾,加入馬蹄煮5分鐘。

3. 馬蹄粉用1/3杯水開稀,加入馬蹄糖水煮至濃稠後熄火。

4. 一邊攪拌一邊慢慢加入蛋液即成。


* notes *
1/ 用糖桂花代替冰糖,便成為桂花馬蹄露。

2/ 蛋液必需離火後才加,否則會鞋口。
