banana chocolate mousse cake 香蕉朱古力慕絲蛋糕

我家最近吹起煲劇風, 24出到season 7我們才看完season 1。接著又趕在Heroes season 2(high def呀!)前看完season 1。

老實說, 我甚少看movie更少煲劇, 對上一次煲劇應該是金枝慾孽。(下巴請不要掉下來啦)
24的前13集很好看, 但其後的劇情都很扯(看到失憶的情節, 簡直是唔係化~~!!? 0禁老土?!無記都唔用啦!)。 老婆女兒超級煩, 所以最後老婆被殺的結局我很喜歡呵。 (心想著早就該死啦!)

Heroes呢, 很多情節都不合理呀!
人家說此劇大受歡迎因為劇中的英雄都是平凡人(更甚者大部份都是loser), 我完全同意, 當真是loser! 最醒目的大慨只有Micah, Parkman最笨 (唉, 到了season 2還是很笨...!)。此劇若非有Hiro應該頗為沉悶, 他blade的造型實在爆笑! t君說他今年Halloween要借我的畫筒扮Hiro云云。

看罷兩劇後我有個疑問, 為什麼美劇中的teenagers都如此無知白痴兼annoying?




Banana chocolate mousse cake


6" round cake / 6 mini cakes

:: Creme Banana ::
Butter // 10g
Milk // 10g
Sugar // 20g
Banana // 100g
Lemon juice // few drops
Banana liquor // 5 cc
Heavy whipping cream // 150g
Sugar // 10g
Cinnamon powder // 1 tsp

1. In a small pot, melt sugar (10g) with a few drops of water until it caramelized. Add in butter and milk. Then add in banana and gelatin until temperature reaches 35C.

2. Move away from the stove, add in lemon juice. Set aside. Add in banana liquor when cooled.

3. Beat heavy whipping cream, sugar (10g) and cinnamon until firm peak.

4. Fold whipped cream into the banana batter by a few batch.

5. Pour the batter into cake pan and refridgate at least 3 hours.



:: Banana chiffon cake ::
Banana, ripe // 50g
Lemon juice // few drops
Egg yolks // 2
Honey // 1 tsp
Oil // 27g
Milk // 12g
Rum // 1 tbsp
Cake flour // 45g
Egg whites // 2
Sugar // 20g

1. Meshed the banana, add in lemon juice, then yolks, honey, oil and milk. When the batter is well combined, add in sifted flour. Mix well.

2. Beat the egg whites to firm peaks. Fold the egg whites into egg yolk batter in 3 times.

3. Bake 170C/338F for 30 minutes



:: Mousse Chocolat ::
Milk // 30g
Whipping Cream // 30g
Egg yolks // 2
Sugar // 10g
Chocolate // 90g
Whipping cream // 110g

1. Heat milk and cream until boil, move away from the heat; combine yolks and sugar.

2. Pour a little milk mixture to the yolks, mix well. Then mix the reminding milk in.

3. Move it back to heat, stir constantly. Remove from heat when the batter thickens. Pour the batter through sieve.

4. Add in melten chocolate and beat well until shiny. Let cool to 35C.

5. Beat cream to soft peak, combine with the chocolate batter.

:: Chocolate Glaze ::
Water // 100g
Sugar // 100g
Cocoa powder // 50g
Liqour // 40g

1. In a saucepan, combine water and sugar, heat until becomes syrup. Remove from heat.

2. Mix in cocoa powder and liquor. Mix until shiny.


:: Assemble ::

1. Set a mousse ring on the baking sheet, place the chiffon cake inside the ring, then the creme banana and finally pour in the mousse chocolat. Refridgate until set.

2. Wrap the cake ring with hot towel to loosen the edges. Turn the mousse ring carefully and remove it from the cake.

3. Pour the chocolate glaze over the cake, make sure all sides are covered.
