這個麵包真的是好香好香芝士味! 燒雞肉混著熱呼呼溶掉的芝士,很想讓人一口吞下去
不過不能吃太多,半個已很飽了!芝心燒雞麵包
: 麵糰 :
高筋麵粉 // 300g
細砂糖 // 21g
細鹽 // 6g
乾酵母 // 3g
牛油 // 30g
鮮奶 // 175cc
老麵 // 50g (可不加)
: 燒雞餡 :
Parmesan芝士粉 // 50g
燒雞肉 // 150g
芝士片 // 6
1. 將所有材料(牛油除外)放入攪拌盆中,拌成粗麵糰,再加牛油再搓至光滑。
2. 蓋上保鮮膜發酵至2倍大。
3. 待麵糰發酵好,分割成每個150g,滾圓靜置20分鐘。
4. 麵糰用手壓扁後,以桿麵棍桿平。
5. 放上2片芝士片,再鋪上50g雞肉,由上而下捲起。
6. 把芝士粉平均的倒在上平碟,把麵糰放入左右滾動好讓表面沾滿芝士粉,發酵至2倍大。
7. 180C/350F 焗 16-18分鐘。
8. 待涼斜切一半,抹上牛油蒜蓉醬即可。
: 牛油蒜蓉醬 :
牛油 // 40g
蒜蓉 // 20g
細鹽 // 適量
Parsley // 適量
1. 牛油待室溫軟化,蒜蓉用白鑊略炒,待涼。
2. 牛油用打蛋器打至鬆軟,加入細鹽,蒜蓉和parsley混合。
* notes *
1/ 雞肉餡料可用燻雞肉或火雞肉。Grocery store可以買到全隻燒雞,但雞胸肉多數鞋口。我用一半雞胸肉一半雞脾肉,效果很好。Parmesan cheese & chicken stuffed bread
: dough :
bread flour // 300g
sugar // 21g
salt // 6g
dry yeast // 3g
butter // 30g
milk // 175cc
: filling :
grated Parmesan cheese // 50g
roast chicken // 150g
cheese slice // 6
1. In a large bowl, combine everything except butter. Beat until well blended using a stand mixer with a dough hook attachment. Add in butter and knead until dough is smooth and elastic. Shape into a ball.
2. Place dough in a greased bowl. Cover, and let rise in a warm place for 60 minutes (double in size).
3. Punch the risen dough down completely. Divide in the dough into 3 balls (150g each). Let rest for 20 minutes.
4. Flat each dough with your hand. Roll each dough into long strip.
5. Place 2 slices of cheese and chicken on the strip and roll it up.
6. Place grated cheese in a plate, roll the dough on the grated cheese and give it a nice coating. Let rise in a warm place until double in size.
7. Bake 180C/350F for 16-18 minutes.
8. When cooled, cut the bread in half, brush some garlic butter on it.
: garlic butter :
butter // 40g
garlic, mashed // 20g
salt // pinch
parsley // pinch
1. Place the butter in room temperture to soften, heat the garlic until cooked. Set aside to cool.
2. Cream the butter with a whisk, combine with salt, garlic and parsley.
* notes *
1/ You can use smoked chicken or turkey for the filling. I found store brought roasted chicken breast meat are usually dry, so I use half breast meat and half leg meat.
